Take a roughly 100g piece of puff pastry, I use ready made pastry, and roll it out till its 0.5cm thick in either a rectangle or square shape. Then score a border around the pastry about 1cm from he edges. Fill the centre will vegetables of your choice, in this version I used tomatoes and cheese to bind but the cheese isn't necessary. Bake in the oven on a medium temperature till golden brown.
I served it today with chopped leek and cabbage fried, baked sweet potato and three Yorkshire puddings. It can be served will many sauces including cranberry, mango and mustard but my favourite is apple sauce.
