Cajun breaded mushrooms.

   Breaded mushrooms are one of my favourite foods, so today I thought I'd try make some of my own. I did the method of coating the mushrooms in flour, egg then bread crumbs. To make sure they were crispy and cooked though I fried them till golden then put them in the oven. Usually breaded mushrooms are garlic but I used Cajun spicing to try something different, I added a little bit of chilli powder for a added kick.
   I had these with oven chips and salad, they tasted really good but the mushrooms were a little well done on the outside - this was due to having the heat too high due to rushing. I also suggest having the bread crumbs as small as possible because mine weren't sticking very well as they were too chunky.

Ingredients:

  • Handful of mushrooms
  • 1 egg
  • 2 slices of bread
  • Flour
  • 1 tbsp Cajun spicing
  •  1 tsp chilli powder

Chickpea, sweetcorn & carrot burger

Found new veggie burger recipe today: Chickpea, sweetcorn and carrot burger. I served this in sesame bread buns with BBQ sauce and melted cheese accompanied by chips. It made 3 burgers of this size, it didn't stick together very well so I used a egg to bind it.

Roast dinner

The roast dinner is a firm favourite of many people but it is difficult to come up with something to replace the roast meat when they become vegetarian. My favourite option is a homemade pie and my method is very simple to make.
      Take a roughly 100g piece of puff pastry, I use ready made pastry, and roll it out till its 0.5cm thick in either a rectangle or square shape. Then score a border around the pastry about 1cm from he edges. Fill the centre will vegetables of your choice, in this version I used tomatoes and cheese to bind but the cheese isn't necessary. Bake in the oven on a medium temperature till golden brown.
      I served it today with chopped leek and cabbage fried, baked sweet potato and three Yorkshire puddings. It can be served will many sauces including cranberry, mango and mustard but my favourite is apple sauce.
